This chopping knife - also called a mezzaluna - enables you to chop tobacco, tobacco substitutes and kitchen herbs evenly with a cradling motion thanks to the crescent-shaped curved stainless steel blade. For this reason, this kitchen knife is also called a cradle knife.
Chopping knives usually have between 1 and 3 blades. This model has a single blade made of sharply ground stainless steel. Because a chopping knife is used with both hands to achieve the typical, even weighing movement, the handle areas are ergonomically shaped and have handles made of solid wood. The two wooden handles fit comfortably in the hand and, with their gently rounded shape, support the fluid movement when weighing herbs.
Chopping knives are flexible in their range of uses, because they are not only suitable for chopping tobacco and kitchen herbs. If a chopping knife - like this model - is single-edged, it can also be used to cut pizzas, tarte flambée or waffles.
Ideally, you chop your herbs on a suitable herb board. A wooden board for chopping knives guarantees that the blade of the chopping knife stays sharp. A flat board is absolutely sufficient. If you use a board with a weighing recess, you should make sure that the roundness of the recess corresponds 100% to the curvature of the knife, so that the blade does not wear out more quickly in places and becomes blunt.
If you want to chop your herbs properly, you should also make sure that you do not break them up, but cut them up cleanly so that the aroma-rich essential oils are not lost in the process.
